Ingredients:
For the Salad
2 medium Hunnyz™ apples, thinly sliced (leave skin on for color)
6 cups fresh baby spinach leaves, washed and dried
½ cup walnut halves, lightly toasted
½ cup dried cranberries
⅓ cup crumbled feta cheese or goat cheese
For the Dressing
3 tablespoons extra virgin olive oil
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup or honey
1 teaspoon Dijon mustard
¼ teaspoon ground cinnamon
Salt and pepper, to taste
Instructions:
Prepare the Dressing:
1. In a small jar or bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, cinnamon, salt, and pepper until smooth and emulsified.
