Ingredients
1 cup fresh cherries, pitted and chopped
1 ripe mango, peeled and diced
1/2 red onion, finely chopped
1/2 cup fresh cilantro, chopped
2 tbsp lime juice
1 tbsp olive oil
Salt and pepper to taste
1/2 cup sour cream (or Greek yogurt for a lighter version)
1-2 tsp chipotle in adobo sauce (to taste)
8 small corn tortillas
Optional: grilled chicken, shrimp, or black beans for protein
Instructions
1. Prepare the Cherry-Mango Salsa:
In a bowl, combine the chopped cherries, mango, red onion, cilantro, and lime juice. Toss gently and season with salt and pepper. Set aside to let the flavors meld.
